Baked Parsnips, 9/24/04



We had this with pork chops and it was delicious. It’s from a contest winner from the Taste of Country Magazine from Massachusetts.

Take 1 1/2 pounds of parsnips peeled and julienned.
¼ cup water
¼ cup butter
½ tsp. dry oregano
½ tsp. parsley
½ tsp. salt
1/8 tsp. pepper

Place the parsnips in a 2 quart ungreased baking dish.  Dot this with butter and add the water. Sprinkle the remaining ingredients over and cover.

Bake at 350 degrees for about 45 minutes or until tender.
